Italian Rice With Sausage
Serves 2
Ingredients:
1/2 lb bulk sweet sausage or two or three links with skin removed
1/2 Cup diced green pepper
1/2 Cup diced sweet onion
1/2 Cup chopped mushrooms
1-2 TBsp oilive oil
1/2 Cup traditional pasta sauce
A pinch of red pepper flakes (optional)
1/3 Cup rice, cooked according to package directions (not Minute Rice)
Cook the rice according to package directions. Add the pasta sauce and set aside. While the rice is cooking, saute the sausage (if you are using links, break them up into small pieces) and other ingredients in a large non-stick skillet which you have primed with the olive oil.
When the meat is thoroughly cooked and vegetables are soft, add the rice/sauce mixture and stir. continue to simmer for about five minutes. Serve hot.
This is the Italian version of a traditional favorite recipe, Spanish Rice. While I have said the red pepper flakes are optional, they are what gives this dish its distinctive flavor.
