A Pompous Twits "Thumbs Up" Recipe!


The following salad was made up and delivered to the July Twitnic at Concannon by "Charter Twit" Carol Rose (with  full credit to the recipe's originator).  I'm told that this salad was quite a hit and that there were numerous requests for the recipe.  I'm betting that it's the hot garlic sauce that gives it that special something!

VIETNAMESE CHICKEN SALAD

A low-fat recipe adapted from Janet Hazen

Dressing:

1/2 c fresh lime juice

6 tbs fish sauce

1/4 c rice wine vinegar

1 - 2 tbs hot garlic sauce

3 tbs brown sugar dissolved in 2 Tbs hot water

Combine ingredients and set aside

Salad:

3 boneless, skinless chicken breasts, poached and cooled and shredded

1 medium onion, thinly sliced

1 medium head Napa cabbage, halved and finely shredded

1 large carrot, slivered

1 bunch scallions, finely chopped

3 jalapeno or serrano peppers, stemmed, seeded and thinly sliced

8 oz bean sprouts

1 bunch cilantro, stemmed and coarsley chopped

2 tbs peanuts coarsley chopped for garnish

Combine all the salad ingredients and toss with the dressing
