Reformation Chile

A recipe stolen from Jim Raisler, who must of stole most of the idea from someone else

This recipe fills a 6 quart crock-pot.

In a large frypan brown the meat and soften the veggies–

1 pound ground beef

1 pound Italian sausage, Bob Evans

- salt and pepper if so inclined

brown for about 4-6 minutes use oil if meat is lean then add

2 -cups finely chopped yellow onions

½ -cup finely chopped celery

½ -cup finely chopped carrot

2 -tablespoons chopped garlic

Cook for 4-6 minutes until veggies are soft.

In crock-pot add and mix well** as if I need to say that

2-(28 ounce) cans of peeled and chopped tomatoes

2- (15.5 ounce) cans kidney beans

2 -(15.5 ounce) cans black beans

1 -small can of tomato paste

1 -cup of beef stock *** (be prepared to add additional after adding meat to bring up to 6 quarts)

2 -sprigs of fresh thyme

2 -teaspoons dried oregano

2 -teaspoons dried basil

1 -pinch of crushed red pepper***my pinch is about one teaspoon

1 -cup chopped peppers, either red, green, yellow or a combo of..

Transfer meat/veggies to crock and cook on low for several hours adding rest of beef stock.

Above all consider adding to or subtracting from, i.e. do your own thing..
