1 1/2 lbs sliced strawberries
2 cups strawberry juice
6 cups brandy (80 proof)
3 cups honey
1 - 4" ginger root, peeled, sliced and scored
Mix the ingredients in a large clean jar (previously rinsed in sodium bisulfite: 1 tsp in 5 gal water) and cap securely. A large gallon mason jar works well. Shake the jar each day for six weeks (it was supposed to be 8 weeks, but I couldn't wait). Filter out the fruit with a coarse sieve. Filter a second time with several layers of cheesecloth or coffee filters. This last filtration removes the fruit pulp.
This recipe makes 6 1/2 cups. Serve chilled or 1:1 with ginger ale for a light summer drink.
This cordial is a "hand-me-down" recipe from

cooking collegium about six years ago.

my altered recipe:
4 cups fruit (I used peaches)
4 cups milk
4 cups brandy (80 proof)
2 cups honey
1/2 tsp cardamom
Mix the ingredients in a large clean jar (previously rinsed in sodium bisulfite: 1 tsp in 5 gal water) and cap securely. A large gallon mason jar works well. Shake the jar each day for a month. After a month, filter out the milk solids and the fruit with a fine sieve. Filter a second time with several layers of cheesecloth or coffee filters. This last filtration removes the spice and the murky wisps left by the milk.
The modified recipe makes 5 1/2 cups. Serve chilled. May it delight your heart!
