MARCHPANE & HAZELNUT CAKES

1 cup marzipan
1 cup hazelnuts/filberts, blanched, peeled and ground
2 cups confectioners sugar
2 egg whites, beaten until foamy (you may not need all of it)

optional
1/4 cup grated lemon, or
1/4 cup candied orange peel, or
a dash of orange liqueur

Mix the marzipan and hazelnuts together (add lemon peel). Stir in the confectioners sugar. If you are using orange liqueur, add it now. Slowly, knead in a bit of egg white. Keep adding egg white until you have a firm paste.

Roll out the paste until it is 1/4 inch thick. Dust with confectioners sugar as needed. If you are using orange peel add it to the top of the paste and roll it in. Cut the paste into shapes. I prefer triangles. Put them in the refrigerator for 1 hour. Serve it forth.

Store unused cakes in a tin.
