Founded in 1988 by two CSU business students, the Pickle Barrel has
continued to attract both new and returning customers. The menu has grown
with each new generation of our sandwich makers. Some of our workers
have left their indelible mark in the form of new unique sandwiches.
The pub side was added in 1993 to complement our great food with the equally pleasing Colorado Microbrews. A hockey jersey was found inside of a wall during construction which greatly contributed to the resulting pub decorating theme.
Our 20th year in business came around in 2008.
At the base of the foothills to the Rocky Mountains, Fort Collins is medium sized city an hour north of Denver. Known for its Old Town and the Colorado State University campus, there are also many Recreational opportunities such as hiking, skiing, mountain biking and world-class climbing.
Small venues, such as the Lincoln Center and the Aggie Theater attract national acts and talented local musicians alike. There are also many other unique sources of entertainment in the local theatre scene, including ballets, play productions, the Fort Collins or CSU symphony Orchestra, and a host of other productions by both CSU and the city.
