Foil Cooking

Camper's Sandwich
4 oz. chipped beef or ham
slice of cheese
1 sandwich bun
Condiments of choice
Aluminum foil
Place chipped meat. cheese and condiments on the bun. Wrap in foil and place on hot coals for about 5 minutes a side.
 
Banana Boat
Banana (1 per serving)
Mini marshmallows
Chocolate chips
Foil
Peel only one side of the banana and cut a wedge down the length of it. Fill the wedge with equal amounts of marshmallows and chocolate chips. Replace the strip of peel and wrap the banana in foil. Place on coals for about 2 minutes. Peel and eat!
 
Ham and Pineapple
1 Ham slice, 1/2" thick
1/2 teaspoon mustard
1/2 teaspoon brown sugar
2 tablespoons canned pineapple chunks
1 teaspoon pineapple juice
Heavy duty foil
Cut two pieces of foil twice the size of the ham slice. Spread mustard on each side of the ham slice. place ham slice on one piece of foil. Sprinkle brown sugar on ham slice. Add pineapple chunks and juice. Fold foil into an envelope, crimping all edges securely; wrap again in second piece of foil. Cook 6 minutes on each side.
 
Ham and Sweet Potatoes
Ham (cubed)
Canned sweet potatoes (cubed)
Canned pineapple (chunks)
2 tablespoons butter
1 tablespoon brown sugar
Heavy duty foil
Place ham cubes on large piece of foil. Add sweet potato cubes and pineapple chunks. Spread butter, sprinkle brown sugar. Fold opposite sides of foil together, leaving an air pocket in pack. Cook 10 minutes on each side.
 
Jericho Fish
1 fish filet
2 tablespoons orange preserves
1 tablespoon slivered almonds
Foil
Spread orange preserves over top of fish filet. Sprinkle with almond slivers. Wrap in foil and bake 6 minutes per side.
 
Pizza Pocket
Pita bread
Pizza sauce
Pepperoni
Cheese
Optional ingredients Foil
Fill the center of a pita bread with pizza sauce, peperoni, cheese, with optional mushroom, olives etc. Fold it over to enclose the 'goodies' and wrap in 2 layers of foil. Bake 10 minutes on each side, and you have a pizza pocket.
 
Aluminum Eggs

Hash brown potatoes
Salt, pepper and spices to taste
Foil
Place potatoes, scrambled egg (doesn't need to be cooked) sausage patty and spices in foil. Wrap securely. Place on coals for 15 minutes.
 
Stuffed Pork Chops
Insert a knife edgewise into a pork chop to hollow the chop. Insert slices of apple dusted with cinnamon and Mozzarella cheese. You may choose to stuff your pork chops with mushrooms.
Place in foil with small onions and sliced potatoes. Wrap tightly, rolling the edges of the foil to seal, and place directly on the coals of the fire. Turn once or twice in 20 to 30 minutes.
 
Roast Corn on the Cob
Carefully open each corn husk and remove silk tassels. Coat with butter and salt. Close the husk and wrap tightly in aluminum foil. Place on the fire grill or directly into the fire. Roast for about 20 minutes, turning occasionally.
 
Hobo Popcorn

String and a stick
In center of foil, place about 1 teaspoon of oil and 2 to 3 teaspoons of popcorn. Bring foil corners together to make a pouch. Seal the edges by folding, but allow room for the popcorn to pop. Tie each pouch to a long stick with a string and hold the pouch over the hot coals, about five minutes. As soon as the kernels start popping, shake constantly until all has popped. Season with salt and margarine.
 
Pineapple Upside Down Cake
Cake donuts
Canned pineapple slices
Butter
Brown sugar
Take a large square of aluminum foil. Cut a cake doughnut in half. Lay a pineapple slice on the doughnut half. Put a few dollops of butter on pineapple, sprinkle with brown sugar. Put the other half of doughnut on top and seal tightly in foil. Lay on coals for about 10-15 minutes. Open carefully as it will be very hot. Tastes just like a pineapple upside down cake... Yummy!
