Squash Raita

Time: 15 min to prepare, 2-3 hrs to chill

Raita (rah-EE-tah) is a lovely complement with spicy dishes. Again, the yogurt really cools down your mouth after being burnt by hot spices.

Ingredients:
1/2 lb squash, peeled and grated
1 1/4 c water
2 c plain yogurt
salt
1/2 tsp ground roasted cumin
1 Tbsp chopped fresh cilantro
1/2 small green chili, minced

Steam squash for about 10 minutes until tender. Strain and squeeze out excess water with hands. Place yogurt in bowl and whisk until smooth. Add squash, salt, and remaining ingredients. Chill in refrigerator for 2-3 hrs.
