Tunas are carnivorous fish that are fast-growing and travel in schools. There are five major species: bluefin, bigeye, yellowfin, albacore, and skipjack. Bluefins are mainly made into sushi and are severely overfished. Canned white tuna is albacore and chunk light is yellowfin or skipjack. Chunk light tuna is the best choice as skipjack populations are doing the best. Although dolphin-safe tuna does not kill dolphins in its harvest, longline-caught tuna actually kills more unwanted species than if dolphins were used to catch the fish. If you have a choice, buy troll-caught tuna, as these have low bycatch.
Ingredients:
rice
water
Vegetable oil
1 can "chunk lite" tuna
>1 Tbsp curry powder
garlic, minced
1 yellow onion
1 can chopped tomatoes
raisins
Optional:
1 can garbanzo beans
cilantro
yogurt
In a pot, combine 3 parts water to 2 parts rice. Cover, bring to a boil, and turn down to a low simmer for about 20 minutes. When water is just gone, turn off heat. Rice will double in size.
Stir fry onion until slightly translucent. Add curry powder and garlic. Stir in the tuna, tomatoes, and beans. Simmer covered until the tomatoes lose their tinny flavor. Add the raisins and cook until they get plump. Serve on rice and top with cilantro and yogurt.
