Mock (Oatmeal) Pecan Pie
Ingredients:
1/4 cup butter
1/2 cup sugar
1/2 teaspoon each, ground: cinnamon and cloves
1/4 teaspoon salt
1 cup dark corn syrup
3 eggs
1 cup quick-cooking rolled oats
1 9-inch pie crust, unbaked
Preparation:
In a large bowl, cream butter and sugar until fluffy. Add cinnamon, cloves and salt. Stir in syrup. Add eggs, one at a time, stirring after each addition until blended. Stir in oats. Pour into crust and bake at 350°F for about 1 hour, or until knife inserted in center comes out clean.
