Blackberry Buckle Recipe
1 qt Blackberries
1/2 c Water
2 c Sugar (divided)
1 t Lemon Juice (optional)
1/4 c Butter or Margarine
1 c Flour
2 t Baking powder
1 t Salt
1 c Milk
Preheat oven to 350 F.
In a medium saucepan combine berries, water, and 1 C sugar, depending upon desired sweetness. Cook until mixture is hot and bubbly. Remove from heat and add lemon juice (if desired).
Melt butter in a 2 Qt baking dish (8”X8”).
Combine 1 C sugar, flour, baking powder, and salt in mixing bowl. Stir in the milk.
Pour batter over melted butter in the baking dish, do not stir. Spoon berries and juice over the batter, but do not stir; batter will rise to the top to form a crust.
Bake for 40 to 45 minutes. Serve with whipped cream. Yields approximately 6 servings.
