Recipe for 83% Whole Wheat Bread in the Bread Machine
1 egg plus enough water to equal 7/8 cup
1 t. lemon juice
1/2 t. salt
2 T. honey
2 T. olive oil
1/2 c. bread flour
2 1/2 c. King Arthur white whole wheat flour
3 T. dried milk
scant 1 T. vital wheat gluten
1 1/2 t. yeast
We really like the white whole wheat flour. I have used Wheat Montana, Hodgsdon Mills, and King Arthur brands, and I like King Arthur the best. Check Kroger if you have one nearby. The white whole wheat is nutritionally equivalent to red wheat, but has a milder flavor. The egg contains lecithin which acts as a natural preservative. You may wish to increase the salt to your taste.
This is the program I use in the Breadman Ultimate:
- Pre-heat: 0
- Knead 1: 3 mins.
- Knead 2: 22 mins.
- Rise 1: 50 mins.
- Punch: 10 secs.
- Rise 2: 25 mins.
- Shape: 10 secs.
- Rise 3: 65 mins.
- Bake: 36 mins.
- Keep warm: 0
- Temp: 336 degrees
