Recipe for Reduced-Sugar, Double-Batch, Strawberry Jam in the Bread Machine

Reduced-Sugar, Double-Batch,
Strawberry Jam in the Bread Machine

2 pounds frozen, unsweetened strawberries
1 3/4 c. sugar
1/4 c. (slightly rounded) low-sugar fruit pectin (Surejell in the pink box)
1 T. lemon juice
1/2 T. butter (to reduce foaming)

Thaw the strawberries. Mash them with a potato masher. Mix in the other ingredients. Pour into bread machine pan.

I have customized the Jam program on my Breadman Ultimate as follows:
  • Preheat 15 minutes
  • Stir 75 minutes
  • 329 degrees

When finished, pour into jars and store in the refrigerator.

I first made this same recipe with 4 cups of sugar and have gradually reduced that amount over time. With 4 cups of sugar, the recipe filled two 32 oz. jars and some extra. With the sugar reduced to 1 3/4 cups, the recipe fills each jar about 3/4 full.
