Apple Strudel |
| This recipe is not for beginners; but, not to worry, this is definitely a case of "practice makes perfect." Mix 1 1/2 cups bread flour and 1/4 teaspoon salt. Then add an egg and 1/3 cup milk. Combine quickly and start kneading on a floured board. Allow to rest for 30 minutes, but keep warm and avoid draughts. Work the dough again, stretching it very thin, paper-thin even, without tearing. On this stretched dough spread a mixture of finely chopped apples (about 4-to-8, depending on size, choosing to peel or not-to-peel by preference), 1/1/2 cups raisins, 1/4 pound chopped almonds (or walnuts or pecans), which all have been flavored with cinnamon, about 1 cup of sugar, and several tablespoons of melted butter. Fold the dough to form a long roll. Twist this roll into an interesting shape on a greased baking sheet (you can also try cutting the roll and making a braided creation or any other fanciful shape). Trim the edges neatly. Bake for 30 minutes in a 400-degree oven and for another 30-to-50 minutes at 350-degrees (waiting for the crisp and browned appearance but being careful to avoid scorching). A wonderful treat which may serve as a dessert, a tea cake, or a brunch specialty. |
