| Aunt Kathryn's Lemon Pie |
Lemon Filling:
- 2 cups milk
- 1 cup sugar
- 3 1/2 tbsb. cornstarch
- 2 or 3 eggs
- 3 tbsp. lemon juice & grated rind
Scald the milk; mix sugar and salt and cornstarch before adding to the milk. Cook in a double boiler for 15 minutes, stirring continuously until thickened. Beat the egg yolks and add to the first mixture. Then cook for an addiontal 3 minutes. Remove from heat and add lemon juice & rind. Cool and pour int oa baked pie shell. Cover with meringue and brown in a slow oven (325°) for 10 minutes or so (depends on your oven).

Crust:
- 5 tbsp. butter or margarine
- 3 tbsp. water (about)
- 1 cup flour
- 1/2 tsp. salt
Mix the dry ingredients, chop in the butter; Add cold water and handle lightly. Bake at 450 deg. for 10-15 minutes. |
