Baker's Devil Food Cake | |

--2 cups sifted cake flour --1 teaspoon baking soda --3/4 teaspoon salt --2 teaspoons baking powder --1/2 cup veg. shortening or butter --1 1/3 cups sugar --2 eggs, unbeaten --3 squares baking chocolate, melted --1 cup plus 2 tablespoons buttermilk --1 teaspoon vanilla |
Sift flour once more, add soda, baking powder, and salt. Sift these together 3 times. Blend or cream shortening and add sugar gradually, combining these two ingredients in a separate, larger bowl until they are light and fluffy. Add eggs one at a time to the sugar-and-shortening mixture. Blend in the chocolate. Next, add in the sifted flour mixture, alternating a small amount with the milk, until a smooth batter is achieved. Finally, mix in the vanilla. Bake in two 9-inch cake pans, greased and floured, at 350 degrees for 30 minutes. Use the toothpick test to check for doneness. |

Frosting: Melt 3 or 4 squares of baking chocolate and 3 tablespoons of butter over hot water (in a double boiler, if you have one). Measure 3 cups of sifted confectioner's sugar, 1/8 teaspoon salt, 1 tablespoon milk, 1 teaspoon vanilla and add this measured mixture to the chocolate one. Let stand for a few minutes in order to achieve the right consistency for icing the cooled cake. Frost the first layer, place the second layer on top and continue covering the cake with this chocolate icing. As a final touch, sprinkle some shredded coconut on top, if desired. |
