Another great recipe

Banana Chocolate Galette
  • 1 1/2 cups sifted cake flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup melted chocolate chips
  • 1/2 tsp. vanilla
  • 1/2 cup mashed, ripe banana
  • 1/2 cup sour cream

Sift together the cake flour, baking powder and soda as well as the salt. Separately, cream the shortening and sugar until fluffy and then add the egg. To this mixture add the chocolate and mix well before also stirring in the vanilla. Then add the sifted dry ingredients, alternately and in small additions, with the banana and the sour cream. Turn the entire mixture into a greased loaf or square pan and bake in a 350°-preheated oven for approximately 25 minutes.

To add a simple glazed icing: about two minutes before removing this tea cake from the oven, brush over with milk and then sprinkle lightly with confectioners or regular sugar.
