| Bea J.'s Chocolate Butter Icing |

Over a low stove-top burner setting, melt 2 oz. of baking chocolate and 2 or 3 tbsp. butter. Add 1/4 cup hot water or cream or coffee and 1/8 tsp. salt. Mix well and then allow to cool. When cooled, add 1 tsp. vanilla and, very slowly, 2 cups sifted confectioner's sugar. 1/4 cup of cocoa may be subsituted for the chocolate and 1 egg may be used instead of the 1/4 cup of liquid. |
