Classic Ice Box Cookies | |

Ingredients: ♦ 3 1/2 c. all-purpose flour ♦ 1/4 tsp. salt ♦ 1/2 tsp baking soda ♦ 1/2 c. brown sugar ♦ 3/4 cup Karo Syrup ♦ 1 lb. butter or margarine |
Sift together the dry ingredients (except the sugar). Beat the butter or margarine until soft and creamy in texture. Add the Karo syrup and sugar to the butter and then gradually add the dry-ingredient mixture to the bowl. When a stiff dough is formed, shape it into 3 rolls. Wrap in wax paper and chill for several hours in the ice box (refrigerator) to create a firm and sliceable dough. Unwrap later and slice about 1/8-inch thick before placing on a cookie sheet. Bake in a hot oven (about 400°) for 10 minutes. Yields about 8 dozen cookies. For variety you can add cocoa powder or shredded coconut or raisins and a dash of cinnamon. You can add a frosting to these cookies if desired. |
