Another great recipe

Gumdrops
Ingredients:
  • 2 tbsp. gelatin (Knox)

  • 1/2 c. cold water

  • 3/4 c. boiling water (or diluted fruit juice)

  • 2 c. sugar

  • 1 tbsp. lemon juice

  • 1 tsp. vanilla or other favorite flavoring

  • Food coloring
Preparation:
Soak the gelatin (Knox brand is fine) in the cold water and, meanwhile, pour the boiling water over the sugar to dissolve it. Mix with the gelatin and bring to boiling point where the potion should remain for about 10 minutes. Then remove this sugar syrup potion from the heat. Add the lemon juice and vanilla or other flavoring. Add a few drops of food coloring if desired.
Pour onto a cooled pan for hardening, which may take half a day or 12 hours. You may cool in a refrigerator too. When sufficiently cooled, cut into strips or rectangles with a hot knife and roll in powdered sugar or regular sugar.
Serve as a candy treat or as a dessert accompaniment.
