Helen's Strawberry Birthday Cake

Ingredients:

--1 angel food cake, made from a mix or bought ready-made *

--1 package strawberry jello (larger size, or two of the smaller size)

--1 cup hot water

--1 box of crushed strawberries (about 2 cups)

--2 tablespoons of sugar (if using sugared, frozen berries, omit extra sugar)

--1 cup heavy cream, whipped

Preparation:
    Combine the jello and hot water until you achieve an egg-white like consistency, then fold in the crushed strawberries and sugar. Lastly, stir in the whipped cream.
    Enjoy applying this pretty pink icing to the angel food cake, which you may plan to serve at a birthday party.
    You may also slice the angel-food cake to achieve a layer-cake presentation, applying the icing between layers as well as on the top and sides and in the well of the cake. If you have a few extra fresh strawberries to place on top or around the bottom edge, you will have a really pretty cake to present to guests.
    Keep uneaten portions refrigerated.
     
for purists:... to make an angel food cake: beat 8 egg whites until frothy and then add 1 teaspoon of salt (for ideal results -- but the cake can also be made with less salt) and 1 teaspoon cream of tartar; beat this mix until peaks start to form; then add 1 teaspoon vanilla flavoring before beginning to add 1 and 1/4 cup sugar; beat until the peaks are stiff; now fold in the cake flour, 1 cup will do the trick; bake in a tube pan for about an hour, then allow to cool for 20 minutes before reversing out of the pan; and voila --   you are ready to apply the icing !
