Mint Chocolate Chip Cookies

Ingredients:
  • 2 sticks butter (or margarine), melted (1 cup)
  • 2 cups sugar (or 1 cup brownulated sugar and 1 cup white)
  • 3 eggs
  • 2 tsp. vanilla extract
  • 1 1/2 cups flour
  • 1 1/2 cups oatmeal (original or instant, or another dry cereal)
  • 1 cup Hershey's (or other brand) cocoa
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt (unless adding a salty cereal)
  • 2 packages choc. chips, mint-flavored (10 oz. packages)
  • 1 small package raisins (1.5 oz)
Preparation:

    Pre-heat the oven to 350°.

Combine the ingredients in a large bowl. Chill for a couple of hours (or overnight) in the refrigerator to make the batter easier to work with. Spoon onto greased cookie sheets. Bake for about 10 minutes. Test for doneness and allow to cool on racks before placing in cookie jar.
    Can be frozen for several months before eating. Yields about 60 to 80 cookies depending on size spooned onto the cookie sheets.
    These are ultra-chocolatey cookies! Great with ice cream for dessert!
