Mocca Brownies

Ingredients:
  • 1 cup butter (or margarine, if you insist)
  • 2 cups sugar
  • 2 tsp. vanilla
  • 4 eggs
  • 1/2 tsp. baking powder
  • 1 cup flour
  • 1/4 tsp. salt
  • 1 tsp. instant coffee (decaf okay)
  • 2 cups chopped walnuts
  • 3/4 cup Dutch Process Cocoa
  • shredded cocoanut (optional)
Preparation:
    Pre-heat the oven to 350°. Grease and flour a 9" by 13" baking pan. Place the butter in a large microwave-safe bowl and heat on high for 2 minutes (a little longer if you keep your butter for baking in the freezer). Allow the butter to cool slightly and then stir in the sugar and vanilla. Add the eggs and then the powdered cocoa. Beat this mixture until blended. Next, add the flour, baking powder, and salt, beating well. Lastly, stir in the nuts. Pour the batter into your prepared pan. If you like, thinly spread shredded cocoanut on top before placing in the oven. Bake for 30 to 35 minutes or until the brownies just begin to pull away from the sides of the pan.
  Caution: do NOT overbake (brownies should be moist and chewy). Cool and cut into bars. Ice if you like, but these are great as they are.
