Another great recipe


Pineapple Cherry Cake

  • 1 lb. dates, chopped
  • 1 lb. pecans, chopped
  • 1 lb. candied cherries, chopped
  • 4 eggs
  • 1/2 tsp. salt
  • 2 or 4 slices candied pineapple
  • 1 cup sugar
  • 1 cup flour
  • 1 tsp. baking powder

      Beat the eggs before adding the sugar and the other dry ingredients. Then mix in the fruit and nuts. Bake for about 90 minutes in a slow oven (300°). Use a large loaf pan or, if using two smaller loaf pans, cut baking time to just one hour. Place the pineapple slices on top of the batter before putting the pan in the oven. Use the toothpick test to check for doneness.

      Slice thinly for serving. Some guests may wish to spread a slice with cream cheese.
