Vinegar Chocolate Cake |
| This recipe may seem a little odd--mixing vinegar and chocolate--but it's actually quite delicious! Really! You'll need a little less than 3 cups of flour, about 6 tablespoons of cocoa powder or, especially to be recommended, dark dutched chocolate powder; then also 2 teaspoons each of vanilla (Mexican, if you have it), baking soda, and salt (or forget this if you are going low-salt these days). Next you'll want the promised vinegar (white vinegar preferred, but cider vinegar is okay too) at about 2 tablespoons. Then add 4 eggs, 2 cups of sugar, 2 cups of water, 2 tablespoons of melted butter. As you can probably imagine, this batter, which you will need to beat for a couple of minutes don't forget, will be rather watery. Not to worry: this stuff will bake up just fine. Pour the mixture into a greased and floured long, sheet-cake pan. Bake at 350° for 45 to 60 minutes, time varying by oven, with most electric ovens doing the job in about 50 minutes. Test for doneness. This cake is great served warm or chilled as is, au naturel. But you may choose to decorate it with an icing. Whatever. Enjoy! |
