$10/LB Swiss Style -Best of Class and Best of Show. Von Mühlenen Ltd. Emmentaler Switzerland Premier Cru® (Switzerland) is a special Emmetal aged for 14 month in humid caves. It was the first cheese from Switzerland that has won the title World Champion at the Wisconsin (USA) cheese world championships. It was nominated best cheese among over 1,700 competitors. For this achievement he has received a place in the Historic Museum in Bern Switzerland. It features prominently in the cuisine of the United States where it is a standard cheese for use in the preparation of sandwiches, albeit often substituted by cheaper "Swiss cheese", a processed cheese that is flavored to mimic true Emmentaler. In cooking, it is often put on top of gratins, dishes which are then put in the oven to let the cheese melt and become golden-brown and crusty. It is also used for fondue.


$11/LB Gouda (The Nederlands)- Best of Class and was second best of show at the World Championship Cheese Contest. Uniekaas Nederland Parrano. and was second best of show at the World Championship Cheese Contest. Attracting a record 1,792 entrants from 18 countries, the Contest took place March 21-23 in Madison, Wisconsin. It is the largest cheese making competition in the world. Parrano distinguishes itself from the competition by combining the pliant texture of a Dutch Gouda with a unique, nutty flavor similar to that of aged parmesan. It is easy to shred, slice and melt and adds full flavor to any dish.

$8 Cheddar, ‘Medium’ - Best of Class - Cabot Creamery Cooperative Vermont Cheddar (Vermont). It's hard to tell which makes their farmers more proud: how smooth their Private Stock is, or how sharp their Private Stock is. This favorite is aged for up to 18 months to develop its flavor.

 

$8/LB Provolone - Best of Class - Burnett Dairy Cooperative Provolone (Wisconsin). Burnett Dairy is a 100-year old cheese plant located in Alpha, Wisconsin. It is owned by over 230 local dairy farmers and has been creating award winning cheeses for over forty years.


$8/LB Baby Swiss Style - Best of Class - Chalet Cheese Co-op Baby Swiss (Wisconsin). Baby Swiss is typically made with whole milk. Silky, creamy texture with small eyes. Mild, buttery, slightly sweet flavor. Slices and melts well. Try it with sweet fruits and berries, croissants and muffins.


$4/LB Feta - Third Award - Klondike Cheese Company Feta in Brine (Wisconsin). Klondike Cheese Co.’s specialty is Feta. The company’s formula hasn’t changed much over the years, and a bevy of awards including firsts from the Wisconsin State Fair, the World Championship Cheese Contest and the American Cheese Society annual competition — not to mention growing demand — attest to the quality of the cheese.


$8 Gorgonzola - Best of Class - WI Farmers Union Montforte™ Gorgonzola (Wisconsin) is an Italian-style Blue cheese with a creamy texture and slightly piquant, full earthy flavor. It's great on salads, pasta, meat, in a soufflé or simply spread on crackers, bread or toast.

$8 Brick, Muenster - Best of Class - Klondike Cheese Company Brick (Wisconsin).

$18/LB Smear Ripened Cheeses - Third Award. Uplands Cheese Company, Inc - Pleasant Ridge Reserve (Wisconsin), Alpine style gruyere. Pleasant Ridge Reserve is an artisan farmstead cheese made in the style and tradition of mountain cheeses from the alpine regions of France. Made from the non-pasteurized milk of a single herd of Wisconsin cows fed and managed using natural, "old world" practices. Their cows graze lush pastures from early spring through fall, just as all cows did before the industrialization of our food system. The resulting milk has better nutritional value and more varied and subtle flavors that are expressed in the delicate flavor profile of Pleasant Ridge Reserve cheese.
