$14/LB Rosemary Sheep (Spain). Produced in La Mancha in central Spain, just like Manchego. A rich sheep's milk cheese wrapped in natural flavorful rosemary. The herbs lend the artisan cheese a fresh flavor and a rustic look, different on the table. See above right. Available also in 5oz package! We were the first and currently only vendor to sell this at a USA farmers' market. This is a favorite of our customers.

the prestigious the 1998 World Championship Cheese Contest. The basil is in
and on top of this cheese for full flavor and a very nice presentation.
$9/LB Fresh Basil Monterey Jack (Michigan). The mild Monterey Jack does allows the basil flavor to come through.

$13/LB Caciotta White Truffle (Italy). A soft, mixed "caciotta" cheese produced from pasteurised cow and ewe's milk and selected milk enzymes. The inclusion of a high percentage content of black truffles only imbues this cheese with the unmistakable flavour of the higly-prized truffle. Excellent as an hors-d'oeuvre and for hot toasted sandwiches, because the heat enhances the aroma of this exquisite truffle. If you love the earthy flavor of black truffles, this cheese leans much towards the truffle side rather than the sheep's milk side, but still provides a wonderful balance between the two flavors.

Dragon (Wales) takes its name from the dragon symbol of the Welsh flag. It is
a blended Welsh Cheddar cheese with wholegrain mustard seeds and Welsh ale.
Red Dragon combines the subtle sharpness and
depth
of natural mustard with the mild, piquant taste notes of the Welsh ale and traditional
Cheddar. This is a favorite of our customers. Great for cheese trays.
Wine Goat (Spain). From a small village in La Mancha. Soaked in wine barrels
for 3 days, aged another 75. Sweet , smooth and f lavored by wine.Delicious
with quince paste. Available also in 5oz package!
$12/LB Chipolte Cranberry Cheddar This white cheddar has cranberries and chipolte peppers for added flavor. It has the taste of the best Texas barbecue sauce and the heat comes on after the flavor of the cheese and has a very warm finish.
