The Corn List

I, Heidi S. Quinn, am responsible for the content of MANY THINGS. Email me at heidi.quinn@comcast.net.

Foods that are CORN-FREE. Here are some things I can eat.

Click here for my corn-free recipes.

I'm also allergic to canola oil, sesame (seeds and oil), and scallops and grapefruit and many drugs. And I avoid figs, flax, coconut, avocados, nut oils, and nuts because they make me feel absolutely sick sick sick.

Get your corn advice from others who are corn-allergic. A few web sites that might help you out:

    "My Week[s] without Corn" Week 1 & Week 2

NOTE: Always read the label. I've listed corn free items below, but companies change their ingredients from one batch to the next, and their ingredients evolve over time... so ALWAYS READ THE LABEL.

Yes! Fresh fruit and vegetables -- except for corn! (**Be careful when buying bananas, avocados, mangos, pineapples, and tomatoes. Some fruits are ripened quickly using ethylene (i.e. corn-based) gas. This isn't a problem for me, but if you're highly sensitive, you can react. The trick is to buy organic or to buy UNriped fruit.**)
Yes! Beef, veal, fish & seafood, wild game (-- except scallops)
Yes! Eggs and cheese (although I stick with what I call "parlor" cheeses that people make in their own milk parlors and I avoid mass-produced cheese)
Yes! Nuts (unsalted) and raisins and dried fruit
Yes! Milk, most apple juice, lemonade and juices you fresh-squeeze yourself at home
Yes! Tap water
Yes! Clover honey, orange-blossom honey, maple syrup, cane sugar
Yes! Butter (unsalted) -- I buy what I call "boutique" butter because mass-produced butters contain preservatives. For example, I've got Kerrygold Pure Irish Butter in my fridge right now. I find it in my grocer's "fine cheeses" section along with a few more expensive varieties of butter. This stuff is NOT CHEAP, which is why I've learned to live with little butter. Of course, if you own a cow you can make your own! =)
Yes! Olive oil, grapeseed oil
Yes! Sea salt, kosher salt
Yes! Natural (unsalted) peanut butter (Smuckers & Teddie) (Although I don't eat peanut butter anymore because nuts tend to make me feel ill)
Yes! Some jams and jellies (read the label)
Yes! Homemade bread (I have my recipe here: French Baguette and Wheat Bread and Bread Loaves.)
Yes! Dried pastas
Yes! Rice (i.e. whole grain, wild, brown, basmati, etc.), dried barley, dried beans, dried peas
Yes! Most vinegars (read the label -- some do contain corn syrup)
Yes! Fresh herbs and spices (In the summer I grow them ALL in my garden so they're always on hand.)
Yes! Wine and beer!
A corn-free item: Whole Foods Italian soda (check the label); Maine Root Beer

A corn-free item: Pacific Chicken Broth (Roche Bros. in Millis) [ditto from above]
A corn-free item: Ghirardelli Unsweetened Chocolate (Whole Foods)
A corn-free item: Hershey baking cocoa (Although I don't eat baking cocoa anymore because it tends to make me feel ill)

A corn-free item: Wasa crackers (in the "gourmet" cracker section, not in the snack aisle) (Although I eat only the RYE variety because the others tend to have sesame or other things I cannot eat)

Tips. Here are some substitutes:

A corn-free tip: I have recipes for ketchup, flour tortillas, salad dressings, lemonade, limeade, meat rubs and marinades, pesto, applesauce, salsas, pizza dough, pie crusts, and more -- just go here.
A corn-free tip: Instead of brown sugar, use granulated maple sugar -- I've found that people don't taste a difference! You can get granulated maple sugar from maple sugar houses, like Clarks.
A corn-free tip: Make your own mustard by mixing Coleman's dry mustard and water. They do this in Britain as a matter of course.
A corn-free tip: Use ¼ tsp baking soda and ½ tsp cream of tartar instead of baking powder. I use Featherweight baking powder available at Whole Foods.
A corn-free tip: Use balsamic vinegar or corn-free rice vinegar instead of store-bought salad dressings, or make your own salad dressings using recipes at Epicurious. Mix in fresh herbs with the greens in your salad and you'll taste the impressive "pop" in the flavor! =)
A corn-free tip: Look for recipes on Epicurious or allrecipes or Food Network. Jamie Oliver's web site is good too, but you have to be able to convert a lot (for example, "rocket" is arugula, and a "courgette" is a zucchini, and you have to convert from metric measurements with the help of web sites like this) -- if you buy his cookbooks here in the US, his measurements are US measurements. When there are food allergies in the house, you have to cook from scratch.
A corn-free tip: Instead of cornstarch, substitute arrowroot (available in your grocer's spice aisle). And don't forget that flour can be used as a thickener, too.
A corn-free tip: Use this substitution for corn syrup: 1 cup corn syrup = 1 cup sugar plus ¼ liquid (water or whatever other liquid is called for in the recipe). I've also read that rice syrup can be substituted directly for corn syrup. I use Lyle's Golden Syrup, a cane derivative available on the British foods shelf among the international aisles in your local mega-chain store... although I'm finding it more and more in the baking section at my grocery store.
A corn-free tip: Make your own vanilla extract. I've got the recipe here.
