Makes 2 pie
crusts
2 cups
flour
1/4 cup
sugar
1/2 tsp
salt
1 cup
chilled unsalted butter, in 1/2 inch cubes
4-6 TBS ice
water
Combine
flour, sugar and salt in a bowl, stir to blend. Add butter and work into
flour mixture with a pasty blender or 2 knives until mixture looks like fine
bread crumbs with a few pea sized pieces. Sprinkle water evenly over
mixture tossing with fork until dough pulls together.
I used a
pastry blender for this the other day for the first time. It worked
great!! Towards the end I worked it with 2 forks before adding the water,
very flaky crust... made little rugelah's with the leftovers for the kids, butter,
cinnamon and sugar. They both went bonkers for them!!
*Note: I
(Jessica) am a fan of using the food processor instead of the knives or pastry
blender. Just don’t overmix!!
