
My
second favorite cookie from Grandma, Roslyn Freiberg. These are not only pretty, but they’re
delicious.
Ingredients
˝ lb
butter, room temperature
4 egg
yolks
1 cup
sugar
2-2/3
cups flour
Grated
rind of 1 lemon
One or
two kinds of the best tart jam or
jelly (raspberry, cherry, apricot, etc.)
Preheat
oven to 325 degrees.
Mix
ingredients together with electric mixer. Shape in to small balls and poke a deep
indentation in to the center with your finger.
Bake at
325 degrees for 10 minutes or “until done.” Transfer to wire cooling rack.
When
cool, using small spoon, fill the center of each cookie with tart jam or jelly.
