The Kezele Weekly Food Report Archive!!!




Soup:
1 Bunch Asparagus (How much is this, um, ~12 medium stalks, ya know, how they sell it at the supermarket.)
1 Carrot
1 Stalk Celery
1/2 Onion
1/4 Cup Butter
1 Tsp Salt
2 cups Whole Milk
Pepper and Nuoc Mam to taste.
Green Onion and Parmigiano-Reggiano for Garnish
Melt butter in your soup pot at low heat. While the Butter is melting Finely Dice the Carrrot, Celery, and Onion. Add salt and diced Vegetable to Butter and cool slowly at low heat.
While Vegetables are cooking, clean Asparagus well, chop into thirds and steam using 1/2 cup water.
(Did you know that thing they tell you on TV about triming Asparagus by snapping it is total BS? It's true! The woodiness in the bottom third of an Asparagus spear is just on the outside. What you do is trim off the dry bit on the bottom of the spear. Then you just use a Vegetable peeler to take of the skin on the bottom third. The bottom third is yummie and sweet, sort of how I would immagine White Asparagus to taste. Not that I would buy any. Don't get me started....)
Ok, where was I....Ok, you've steamed the Asparagus. It takes about 7 min. Remove the asparagus and save the tops. Put the rest of the asparagus into the soup pot with the vegetables. The water you steamed the Asparagus in has a nice green color and a bit of Asparagus aroma. Throw it in the soup pot. Then add the 2 Cups Whole Milk. Let the soup simmer for about 10 min...or until all the Vegetables are reasonably soft. Now, have at it with your Stick Blender. Blend until the soup is a nice creamy consistency. Now add Pepper and Nouc Mam to taste.
Simmer the Soup until its ready to serve. When serving garnish with chopped Green Onion and big shavings of Parmiginano-Reggiano. Use big shavings so you can pile the Cheese in a dramatic form!
Garlic Toast:
Two slices White Sandwich Bread
1 Tablespoon Butter
1 Clove Minced Garlic
1 Tsp Italian Seasoning
Mash Butter, Garlic, and Italian Seasoning together. Spread on Sandwich Bread. Heat in Toast-R-Oven or under your broiler until its bubbly and brown on the edges. Don't walk away while you are doing this, keep watching it! It won't take long and is easy to burn the toast!

Bacon Wrapped Baked Halibut

This did not work as well as it could have, I had to bake it so long to get the bacon cooked that the Halibut was a bit (just a bit) over cooked. Next time I'll use direct heat; so the broiler, or gill it. And use more bacon.

Salmon Fried Rice with Asparagus
Ok, so what happened is that I made a Vietnamese Dish called Ca Kho out of Salmon. It involves frying the fish in caramelized sugar and then adding water and braising it. It's normally made out of Catfish. I made it earlier with Farmed Trout and it turned out perfect. I made it whith this salmon and I over cooked it and dryed it out. So I salvaged this dish by putting it in this fried rice

6This meal was made by my niece Lisa who's name is Phuong under my supervision.
5This turned out ok. The Spaetzle was very very good but I made the mistake of cooking the Sauerbraten on a weekday in the Crock Pot. Because our commute is so long the Sauerbraten was over cooked. Next time I'll make it on a weekend where I can keep an eye on it.
4I have no idea what the name of this vegetable is in English or Vietnamese. It tastes and behaves like a zucchini, but is far larger and has these sharp nasty little thorns around the stem. If anybody can help me out, let me know!
3My mother in law has a habit of overcooking meat, which in the case of pork loin can be catastrophic. We always get leftovers, so Kim invented this dish to salvage it. My friend Parin told me that "Kashmiri" is simply a dish using the fruits of the Kashmir, apples and raisins. In this case we used a Granny Smith. I modified it bit by adding more Raisins, Chicken Broth, and Garam Masala.
