Eggs in a Hole

This is a classic breakfast dish and one of our favorites. We seem to have these for breakfast at least once on every camping trip.
Ingredients:
Procedure:
Spray a frying pan or griddle with cooking spray and pre-heat over medium heat. Take a small glass (or similar) and cut out a 1-1/5 or 2-inch hole in the middle of a slice of bread. Place the bread in the frying pan and crack an egg into the hole. When the egg is nearly set, spray the bread/egg with cooking spray and flip over (the egg -- not you!). Season with salt and pepper. Serve almost immediately if you like runny yolks or cook until the egg is done to your liking.
Remember that bread circle you cut out earlier? Toast it lightly in the same frying pan and serve along side the egg-in-a-hole.
