Quesadillas

Here's something that's easy to make over a campstove. It's also a great way to use up any leftover meats from the night before.

Procedure:
Pre-heat a griddle or skillet over medium heat. Spray one side of a tortilla with cooking spray. Placed sprayed-side-down onto the griddle. Sprinkle cheese over one half of the tortilla. Sprinkle on some of the Southwest-style seasoning and cilantro. Fold the tortilla in half and grill both sides until golden brown and the cheese inside is melted. Cut into two or three wedges and serve with your choice of garnishes.
Some variations: Got some leftover beef, chicken or pork? Slice it up and toss it in before you fold over the tortilla. For a more decadent version, crack open a can of crab meat and toss some in.
