Erin's Special Buttercream Icing

This icing is similar to the flavor and has a medium consistency like bakery icing.  It is ideal for frosting and borders.

Prep and cook time:

Makes:

7 ˝ cups

Ingredients:

  1 c solid vegetable shortening* (Crisco)
  1 c butter
  2 lbs. confectioners' sugar (There are 4 cups to a pound)
  ˝tsp. salt
  1-2 tsp. vanilla
  8 oz. whipping cream

Directions:

  1. Cream shortening until fluffy.

  2. Add sugar and continue creaming until well-blended. 

  3. Add salt, flavoring and whipping cream; blend on low speed until moistened.  Beat at high speed until icing is fluffy.

 

Extra-Special Buttercream icing needs to be refrigerated, both after it is made and when it is placed on a cake.  It will keep 3-5 days in the refrigerator. 

It is great with Duncan Hines Moist Deluxe White Cake Mix (red box).  Everyone always says that this is the "best" white cake ever (cake & frosting).
