Chicken With Hoisin Sauce & Nuts

Ingredients:

medium whole chicken breasts | |
| ½ cup | diced water chesnuts | |
| ½ cup | diced sweet peppers | |
| ½ cup | diced onions | |
| ¼ cup | nuts-peanuts, cashews, or almonds | |
| 4 Tbsp. | oil | |
| 1Tbsp | soy sauce | |
| 2Tbsp | hoisin sauce | |
| ½ tsp | salt | |
| 1Tbsp | dry sherry | |
| 1 tsp | cornstarch |

Directions:
1.Dice, skin, and bone chicken.
2. Place chicken in a bowl and pour sherry and soy sauce over it.
3. Sprinkle on cornstarch and toss to coat lightly and evenly.
4. Set wok over high heat and add 1 Tbsp. oil
5. Stir fry onions, water chestnuts, and peppers for 2 min. Add ½ tsp of salt. Mix and remove from pan.
6. Heat 3 tbsp. oil in wok; stir fry chicken until meat turns color.
7. Add Hoisin sauce and mix well. Add cooked vegetables and mix a few times. Add nuts and serve.
Tips: Dicing water chestnut, peppers, and onions is optional.
