Curried Pork Tenderloin

15 minutes prep, 30 minutes

 

Makes:

4 servings

 Ingredients: 

 

1 lb

Pork Tenderloin

 

1 tbsp

Brown sugar

 

2 tsp

Curry powder

 

1 tsp

Dry mustard

 

½ tsp

Salt

 

½ tsp

Hungarian sweet paprika

 

½ tsp

Pepper

 

 

Cooking spray

 

½ cup

Mango chutney

 

 

 

 Directions:

  1. Preheat oven to 425o.

  2. Trim fat from tenderloin.  Combine sugar and next 5 ingredients; stir well.  Rub tenderloin with spice mixture.

  3. Place tenderloin on a broiler pan coated with cooking spray.  Insert a meat thermometer into thickest portion of tenderloin.  Bake at 425o for 25 minutes or until thermometer registers 150o (slightly pink).  Let stand 5 minutes before slicing.  Serve with chutney.
