Lomo Saltado

30 Minutes prep, 15 minutes cook

 

Makes:

6 servings

  With: Steamed rice

Ingredients:

 

1˝ lb

Tenderloin, sliced into strips

 

2

medium red onions (or 1 big one)

 

1

can, diced tomatoes

 

1 lb

French fries, cooked

  1 Tbsp garlic paste or garlic through a press
  4 Tbsp vegetable oil
  2 Tbsp chopped green onions
  4 oz red vinegar
  2 oz soy sauce
    dry parsley to taste
    cumin to taste
    salt and pepper
    chili paste

Directions:

  1. Brown meat in 2 Tbs. of vegetable oil, high temperature, remove juice while browning, and keep juice for later.

  2. Remove meat from heat, and on the same pan, add 2 Tbs. of oil, and sauté the onions and garlic. Add salt and pepper, red vinegar, cumin, parsley, soy sauce, and chili.  Once soft, add tomatoes, meat, juice, and French fries.

  3. Remove from heat and sprinkle green onions on top.
