Pulled Beef Sandwiches

Long simmering makes the cabbage disappear into the beef, creating great flavor and texture.

Prep and cook time:

1 hour prep, 3-4 hours cook

 

Makes:

24 sandwiches

Ingredients:

 

4 lbs

cooked roast beef

 

9 c

shredded cabbage

 

2 c

ketchup

 

1 15-oz can

beef broth

  ¾c Worcestershire sauce
  2 tbsp fresh squeezed lemon juice
  1 tbsp yellow mustard
  2 tsp salt
  24 hoagie (or hamburger) buns

Directions:

  1. In a 4-6 quart Dutch oven, combine shredded beef, cabbage, ketchup, beef broth, Worcestershire sauce, lemon juice, mustard, and salt.

  2. Cover and simmer over low heat for 1 hour, stirring occasionally.  Uncover and simmer for 1 hour more, stirring occasionally.  Serve on buns.
