Emeril's Bacon and Cheese Scones

Ingredients:

sharp cheddar cheese, grated (1 cup) |

Directions:
Preheat oven to 400ºF.
Cook bacon until crisp, drain well, and set aside.
In a large bowl, combine the flour, baking powder, sugar, and salt.
Cut in the butter, then stir in cheese and bacon
Stir in 1 cup of the cream and work just until it becomes a sticky dough, being careful not to overwork. You may need to add another ⅓ - ½ cup to get it to the right consistency.
Knead lightly, and divide into two parts. On a parchment lined baking sheet pat into two 7: circles, about ¾" thick. Cut each circle into 8 wedges. Paint the tops with a little cream and sprinkle with a little sugar.
Bake until golden brown, about 20-25 minutes. Serve warm. Makes 16.
