Emeril's Bacon and Cheese Scones

Makes:

8-10 servings

Ingredients:

 

3 slices

bacon

 

3 c

flour

 

1 tbsp

baking powder

 

1 tbsp

sugar

 

1 tsp

salt

 

1 stick

butter

 

4 oz.

sharp cheddar cheese, grated (1 cup)

 

1⅓ - 1½ c

heavy cream

Directions:

  1. Preheat oven to 400ºF. 

  2. Cook bacon until crisp, drain well, and set aside.

  3. In a large bowl, combine the flour, baking powder, sugar, and salt.

  4. Cut in the butter, then stir in cheese and bacon

  5. Stir in 1 cup of the cream and work just until it becomes a sticky dough, being careful not to overwork.  You may need to add another ⅓ - ½ cup to get it to the right consistency. 

  6. Knead lightly, and divide into two parts.  On a parchment lined baking sheet pat into two 7: circles, about ¾" thick.  Cut each circle into 8 wedges.  Paint the tops with a little cream and sprinkle with a little sugar. 

  7. Bake until golden brown, about 20-25 minutes.  Serve warm.  Makes 16.
