Dressing up a bag of Salad

The easiest side dish is often a salad - one that starts with a bag of pre-washed greens.  Just open, dress, throw in a few extras and then serve.  Here are some suggestions. 

bulletDress tender young watercress, now available in bags, with red wine vinaigrette, and sprinkle with a generous handful of dried cranberries

Mesclun (baby lettuce) mix is lovely dressed with a balsamic vinaigrette and sprinkled with toasted pine nuts or sunflower seeds

Romaine, Arugula, and radicchio (often sold together as "Mediterranean Mix") taste great tossed with an herbed olive oil vinaigrette and some crumbled fresh goat cheese.

Drizzle romaine, spinach, and other sturdy leaves with a ranch-style dressing.  Add some herb-seasoned croutons.

Mix Arugula with sliced dried figs and shavings of Parmesan, then toss with a balsamic vinaigrette.
