Chris' Killer Caesar Dressing

Makes:

2-4 servings

Ingredients:

 

5 oz

Olive oil
  2 oz Red wine vinegar
  1 oz Balsamic vinegar
  1 oz Fresh squeezed lime (can substitute lemon)
    Worcestershire sauce
    Mashed garlic (lots, like 2 cloves worth)
    Finely chopped anchovies
    Crushed black pepper
Optional: ½ oz Mustard
  1 Coddled egg

Directions:

  1. Mix first 4 items together using a wisk. 

  2. Beat with wisk as you add each remaining item.

  3. Toss romaine with dressing, add grated parmesan or romano cheese.  Optionally add bacon bits and crutons.

 

Chris makes huge batches - instead of using an ounce measure, he uses a cup.  It keeps for weeks in the fridge.
