Chris' Killer Caesar Dressing

Ingredients:

5 oz |
Olive oil | |
| 2 oz | Red wine vinegar | |
| 1 oz | Balsamic vinegar | |
| 1 oz | Fresh squeezed lime (can substitute lemon) | |
| Worcestershire sauce | ||
| Mashed garlic (lots, like 2 cloves worth) | ||
| Finely chopped anchovies | ||
| Crushed black pepper | ||
| Optional: | ½ oz | Mustard |
| 1 | Coddled egg |

Directions:
Mix first 4 items together using a wisk.
Beat with wisk as you add each remaining item.
Toss romaine with dressing, add grated parmesan or romano cheese. Optionally add bacon bits and crutons.
Chris makes huge batches - instead of using an ounce measure, he uses a cup. It keeps for weeks in the fridge.
