Grilled Onions

"Cipolle sulla Gratella"

A grilled onion is surprisingly sweet; the hint of carmelization goes well with grilled meats.

Makes:

6-8 servings

Ingredients:

medium-size to large yellow onions (about 2 lbs), peeled
   ½ c olive oil
  3 Tbsp parsley, finely chopped
    salt and freshly ground black pepper

Directions:

  1. Prepare a medium-hot charcoal fire or preheat a gas grill for 15 minutes on high. 

  2. Meanwhile, gently boil the onions whole in a large saucepan of lightly salted water fro 10 minutes.  Drain and cut into halves or quarters.  Dip the onions in a bath made of olive oil, parsley, and salt and pepper to taste. 

  3. Grill the onions, turning, until they are browned and easily pierced with a fork, about 30 minutes. 

 

Tip: For a change, use 2 lbs of peeled red onions.
