Sample Menus

#1.  Comfort Foods

Country French Baked Chicken - Big, tender chunks of chicken mix with new potatoes, carrots, and pearly onions in this tasty European stew. Served with peppery-herb biscuits.

Creamy Southwestern Bean Soup - A hearty, satisfying soup with the warm flavors of Mexican cooking. Served with jalapeno cornbread for a well-rounded meal.

Meatloaf with Barbecue Glaze - Old-fashioned flavor will bring back childhood memories.  “Lumpy” garlic-mashed potatoes and warm apple pie for dessert make this meal complete!

Tuna Chowder - A creamy, fulfilling, thick soup with fresh flavors of dill and thyme.  Serve with crusty whole grain rolls to get every drop!

Pork Paprikash - Tender pork medallions lightly sauteed with a mild white-wine sauce.  Served over egg noodles with baby peas on the side. 

#2.  Vegetarian

Zucchini Chimichangas - Ole!  The spicy flavors of this crispy dish will have your mouth asking for more! Serve topped with sour cream and salsa. 

Red Lentil Soup with Garam Masala - A taste of India in this healthy soup with the warming flavors of cumin and cinnamon.

Vegetable Shepherd’s Pie - Meatless version of an all-time favorite. This one is loaded with carrots, corn, green beans, and cheddar cheese all topped with mashed potatoes.

Eggplant Rolls with Marinara - Thin slices of fresh eggplant stuffed with three cheeses and topped with a light marinara.  Serve with a fresh green salad to complete the meal. 

Orzo and Portobello Mushroom Casserole - A hearty casserole filled with the Mediterranean flavors of sun-dried tomatoes, balsamic vinegar, and a light sprinkle of Parmesan cheese.
