Chix Adobo
Mah's Recipe
- 1 whole young chicken, chopped
- 1-2 bay leaves
- 1/4 cup Kikkoman soy sauce
- 1/8 cup apple cider vinegar
- ground peppercorn
- 4 garlic cloves, crushed, minced, or sliced
- 1 ginger slice, crushed
optionals:
- 1 tbsp chinese rice wine
- 1-2 tbsp oyster sauce
- DUMP everything in a saucepan, then place on cooktop over med-hi heat. Bring to a quick boil, then stir to incorporate. DO NOT ADD WATER. Cover, lower heat to simmer for about 15 minutes to render out enough liquid.
- Uncover and thoroughly stir. If needed, add 2-4 tbsp soy sauce and 1-2 tbsp vinegar. Bring to a low boil & partially cover for 20-30 additional minutes.
- Remove from heat & serve with steamed rice.
Prep time depends on how quick you can chop up your chicken
Cook time: approx 45 minutes
