Buffaloed Hot Wings

  1. Preheat oil to 350°F. Do not let heat go over 400°F. Use a thermometer if needed.

  2. Mix together all 3 sauces thoroughly on a small skillet or saucepan over low heat. Remove from heat after 3 to 5 minutes. Add in butter and stir around sauce to incorporate. Set aside.

  3. Carefully deep fry wings without overcrowding fryer/pan. If necessary, cook five pieces at a time. Wing should be floating when done, about 6 to 10 minutes.

  4. Drain cooked wings on a paper towel or on a rack. Transfer in a bowl, add in sauce, and toss. Use a spatula to coat thoroughly. Serve with bleu cheese dip.

Jufran banana ketchup or Maggi chilli sauce are sweetener add-ons. If desired, they can be substituted with Teriyaki or anything else, even brown sugar. Jufran & Maggi sauces can be found in Asian stores. The same brands can also be found in some Safeway and Albertsons, only most likely way, way more expensive.
