RESTING is probably the most important step when cooking steak, chops, etc. Once out of heat, your meat requires at least two minutes idle time in room temperature to finish cooking and to let reset its fibers and therefore holding on to whatever juice left ultimately avoiding a tough, dry, leathery dish. It also requires minimal contact while your meat sits idle. I let my steak rest for three to five minutes on one of those wire racks that came with our toaster oven.
