Fresh Apple Cake

2 cups sugar
1 1/2 cups vegetable oil
4 eggs
2 cups self-rising flour
3 teaspoons Cinnamon
2 teaspoons vanilla extract
3 cups chopped apples (core apples, but don't peel them)
2 cups chopped nuts
Cream Cheese Frosting

Mix sugar and oil. Add eggs and mix well. Sift flour and cinnamon together; add to the mixture and blend well. Stir in vanilla extract, apples, and nuts. Pour into a greased 13" x 9" baking pan. Bake at 325°F for about 1 hour. Frost with cream cheese frosting.
