Brandied Cherries

2 cups simple syrup
6 cups pitted dark sweet fresh cherries
2 cups vodka
2 cups brandy
8 whole allspice (optional)

Place 1 cup simple syrup, cherries, vodka, brandy, and allspice in a 1-gallon jar. Cover and let sit at room temperature for 3 weeks, swirling mixture every 3 days.

Drain cherries in a colander, reserving the brandy. Place cherries in gift jars, leaving at least 1/2 inch of space at the top of the jar.

Strain brandy through dampened cheesecloth, then clarify through dampened filter paper. Sweeten with additional simple syrup if desired.

Pour brandy over cherries. Put remaining brandy in bottles or jars with tightly-fitting lids. Cap jars and let brandy and cherries age for 4 to 6 weeks.
