India Relish
8 pints finely chopped green tomatoes
3 pints finely chopped green bell pepper
1 pint finely chopped red bell pepper
1 pint finely chopped onions
2 tablespoons celery seed
2 tablespoons mustard seed
2 tablespoons kosher salt
5 cups white vinegar
4 cups sugar
2 sticks cinnamon
1 tablespoon whole cloves
1 tablespoon whole allspice
Tie up cinnamon sticks, cloves, and allspice in a cheesecloth bag. Combine vinegar, sugar, salt, mustard seed, celery seed, and spice bag in a large non-reactive pot. Bring to a boil and add chopped vegetables. Boil 15 minutes. Pack into hot sterilized jars and seal. Makes about 10 pints.
