Mexican Coffee Cordial

3 cups Simple Syrup
6 tablespoons instant coffee
6 tablespoons boiling water
1 vanilla bean, split
15 whole cloves
10 whole allspice
2 cinnamon sticks
2 cups brandy

Pour boiling water over instant coffee in a large saucepan; stir to dissolve. Add simple syrup, vanilla bean, cloves, allspice, and cinnamon sticks. Heat over medium heat to boiling. Remove from heat; cool to room temperature.

Pour into a 2-quart jar with a tightly-fitting lid. Stir in the brandy. Cap and allow to steep for 2 weeks, stirring every 3 days.

Strain through a sieve lined with a double thickness of dampened cheesecloth. Clarify through dampened filter paper. Sweeten with simple syrup if necessary. Put in a covered jar and let age 3 to 4 weeks.

Decant. Add 3 to 5 whole coffee beans to decanter.
